Advice needed please folks, I'm trying to soldering my connections on my shiny new esc, now my trouble is I've got a 30watt soldering iron but I can't seem to get the solder to stick to the esc connections, if I do get a wire attached it breaks off with the slightest pull. Any info in wattage or solder please?

You will need at least a 50W iron, and need to tin (coat) the ESC terminals with solder and the same with the wire before trying to solder together.

And get some flux on there, cleans up the surface nicely.

Yup Defo go with the flux
I use it for every bit of soldering I do.

I've been using a 40w soldering iron that i got from maplins about 2yrs ago , was in a sale at about £20 !!
and use this solder ..http://www.ebay.co.uk/itm/SILVERLINE-AS15-SOLDER-100g-/291017629972?pt=UK_Home_Garden_PowerTools_SM&hash=item43c200a114

Does motors and speedos with ease. Can't go wrong for £14.99 either.

That's the key, a big tip to hold the heat. If it comes with a taper tip change it for a chisel tip at least 6mm diameter - the bigger the better. HTH :)
