I run a 8.5 with a bit of timing, modified firmware in my 2wd and it's really quick.

If you were to run a 6.5 or a 7.5 with stock firmware and all the boost/turbo and timing you could cook your motor/speedo, or it would thermal and you would not finish a race.

Tekin RS pro in a 2wd running to much boost with a hot motor, was about a year ago at my local club.

Think you're getting bit confused over the firmware names. Stock firmware would have settings for boost and turbo. Think it's like 60 deg max for both combined on some escs. Use this on lower turn motors like 10.5 or 8.5

Mod firmware would be used for quicker motors like 6.5 and has lots less programmable timing and turbo allowed.

Imho as you're asking which motor and software to use I'd go for a slower motor like an 8.5 and have a play with the settings over time. Still be plenty fast enough for club and regional level. Also can turn all the settings off on sloppy days!

Think you're getting bit confused over the firmware names.+1

The names refer to the motor being used, not what you can do with the ESC.
With a 7.5 you are probably into the realms of needing the Mod software, or if you use the Stock, you will need to turn the wick down quite a bit on things like turbo and boost. TBH, 7.5 is a pretty quick motor for a 2wd.
