what effect does locking the centre diff have on handling, looking at replacing diff with slipper assembly which would allow difference in drive from front to rear, any comments or idea's

Well regular center diffs allow for differences in drive from front to rear, locking it would kill that effect the handling alot, especially off power steering and traction. But the slipper should assist in traction in bumpy or slippery spots. I know the RC monster slipperential allows for both to be occurring, slipper and diff.

my thoughts and design is basically 2 seperate viscous slippers, 1 to front 1 to rear, probably not as good as a slipperential, may have to see if it is possible to create an equivalent to a slipperential, definately cant afford to buy one, especially for a budget conversion

Not having a centre diff affects the bump handling ability - making it less stable. It also reduces the amount of steering - off power especially.

Basically, it will make the car understeer, and harder to drive over rough terrain.
