welcome to the world of 10th!
asuming you are a fairly competent driver from yours days of rallyX, then you should probably be ok with a motor around the 7.5 region. Some people run 6.5 but that is about the limit for 2wd. An 8.5 would be slightly safer, but if you get to grips with it quickly you may want a little more top end.
The speed passion v3 motors are currently the pick of the market, they are also slightly cheaper than the motors from LRp etc. And they have a very convenient plug in system to make swapping them around much easier.

For a speedo, again the speed passions are one of the best on the market in terms of performance and settings. They also work out very favourably on price compared to the LRP and Novak etc.
For a 7.5 motor in 2wd you should be able to run the LPF version which is slightly lower powered than the full GT2. If however you may want to move into 4wd at a later date with a more powerful motor then you may want to get the GT2 from the outset.

As for the cougar. The S1 kit is ok, but it lacks a few upgrades included in the Pro kit such as the Shocks and diff balls etc.
There are a few knocking around second hand, so you may be able to get a newly new Pro kit for a similar price to a new S1.

Cheers jim, how do you go about running in the winter do you have to spray everything in water proofer or something alike?

not really. the motor is inboard on the Cougar so is pretty well protected, and the undertray makes a good seal.
To be safe a bit of blue tak over the receiver plugs and the sensor wires on the motor & speedo usually does the trick
