do you have to lock the center diff on conversions, as normaly you have the disc brakes both side of the diff braking front/ rear , well with them gone and it open would it only brake one end of the car or lock the wheels up ect?

No just run normal diff oils. You won't be able to brake as hard as with a nitro, but it's ok.

in my eyes if you used full brake so the diff stoped spinning, it would cause the rear to lock up but the front to be free and, would the breaking be unpedictable in race conditions

NO. If the traction is there Ebraking goes from full on to DEAD stop instantly. Infact if the traction is there you can do front flips. Nitro brakes are dependent on the strength of the servo, quality of the brake disks/pads, if there is fuel or dirt on the pads it weakens the braking power, and there is a physical time lag on nitro brakes from the time your finger hits the brakes to the servos motion to the squeezing of the disks. Nitro buggies do have brake bias which can help some drivers.
