Why not use an old CVD axle and cup joint suitabley modified for the Caravan hitch, will not unhitch unless say unscrewed from the the servo post.
The axle end could then go through the body and be fixed to the caravan chassis; much stronger and less liable to break the hitch end off the body in my opinion.

Lighting connection between car and caravan you could use say a BEC plug and socket with the coiled telephone wire for the cable, again just a thought for you to think about.

I have a water bowser that I tow behind a 4wd buggy on fun nights at my club.
It has monster truck wheels and tyres, the jumps are no problem with this setup as the connection is wire and spring; simple and strong.

I like your set up its more to scale than mine, and you should put the lights on both, maybe even a flashing blue one on the car roof and police signs along the sides of the caravan at least HaHa

Target on the back is a good idea too Ha Ha

Sorry I realise you dont want it targeted for the demolition derby type racing.
